Ingredients

  • 2 lbs 900 g green cabbage
  • 1 (4 oz.) 1 (110 g) yellow onion, thinly slicedyellow onions, thinly sliced
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • 4 oz. 110 g butter
  • 1½ cups 350 ml heavy whipping cream
  • ½ cup 120 ml sour cream
  • 6 oz. (¾ cup) 170 g (180 ml) cream cheese
  • 1 tbsp 1 tbsp ranch seasoning
  • ½ tsp ½ tsp ground black pepper
  • 1 tsp 1 tsp salt
  • 1½ cups (6 oz.) 350 ml (170 g) shredded cheddar cheese
  • unsalted butter for greasing

Making low carb simple

Instructions

Instructions are for 6 servings. Please modify as needed.

  1. Preheat the oven to 400°F (200°C). Grease a 13 x 9" (33 x 23 cm) baking dish.

  2. Shred the green cabbage using a sharp knife, mandolin slicer, or a food processor.

  3. Melt the butter in a large frying pan over medium-high heat. Fry the cabbage, onion, and garlic for 8-10 minutes, or until the cabbage is softened. Add the heavy cream, sour cream, cream cheese, and spices. Reduce heat to medium-low, stir together and simmer uncovered for 5-10 minutes, or until combined and creamy.

  4. Spread the mixture into the baking dish and sprinkle the cheese on top. Bake on the middle rack, uncovered, for 15-20 minutes, or until the cheese is melted and is lightly browned. Cool for 5 minutes before serving.

Tip!

These rich flavors pair beautifully with grilled - or fried - meat and fish. Whip up a double batch, and freeze the extra in small containers for a quick side dish any night of the week. Save even more time by using pre-shredded coleslaw – just avoid mixes with carrots if you can.

    Just use double cream instead of whipping cream and you can make your own cream cheese by adding lemon juice to cream, letting it curdle then leave to drain.

    Made this as part of my meal prepping for 5 lunches. Unfortunately I could not eat it and threw the entire thing out. The texture was awful and the taste was not good. If you're not a cabbage lover you prob won't like this.

    I must have done something wrong because I didn't like this dish at all. It's like coleslaw cooked, with too much mayo in it. I followed the directions, but there was way more cheese than cabbage. What happened?

    💕this is a favorite! We have this all the time! My husband says "I never thought I would be asking for cabbage but this is awesome". I do add more cream cheese and sour cream and a little less heavy cream. Not sure what I did to the last one I made but I was told it was the best one I ever made! Thanks for the GREAT recipe!

    Fabulous dish—just made it and my husband can’t get enough of it. So I probably won’t have any for freezing—but I wondered if the sauce would separate out if I reheated after freezing? Anyone tried it?

    Hi Mary, so glad that you and your husband enjoyed! It mentions freezing a double portion in the tips, so you can certainly freeze and reheat this if you would like.     I was looking forward to this as I've mainly been eating cauliflower, broccoli and spinach for veg and thought cabbage would brighten up the diversity a bit. Despite using less cheddar and slightly more herbs than recommended, the whole thing just tasted of the cheese. None of the cabbage or her flavours came through. If you're vegetarian or pescatarian low carb, you appreciate how over familiar that taste gets.

    I have actually made it without the cream, cream cheese, onions or ranch dressing, and just cooked the cabbage in butter flavoured coconut oil, added some chili seasoning, and salt and pepper. I have vegan friends so I have made this with the vegan hamburger and cheese. When I make it with real hamburger is let it all sit and put some shredded cheese in it and then sprinkle some on top to let it melt before serving. This one is very flexible and you can pretty much do what you want to make a meal
