New Recipe: Cucumber Salad with an Asian Twist (and Beauty Blogger Assignment) | Solluna by Kimberly Snyder (1)

Isn’t plant food amazing? Up close this almost looks like a painting, right? There is so much art and wonder in nature!

I am so excited to share another new recipe with you today (that I made for a client yesterday), that was inspired by what’s going on here in England, produce-wise and also by my Thai cooking classes from a few weeks ago in Thailand. I loved them, but some of the ingredients for Thai cooking are rather hard to find (is banana flower at your corner market?), but this recipe uses ingredients that are easy to source.

First though, I want to congratulate all that participated in our Beauty Detox Blogger Recipe Assignment last week, which was for our Turlu Turlu Turkish Casserole (how’s that for recipe tongue twister?). You guys are amazing (woot woot)! We saw so many AMAZING dishes and versions, and here are some of our top four that we love from you guys:

And to keep doing the assignments!!! Which brings me to this week’s…

As I mentioned above, I loved my Thai cooking classes from a few weeks ago when I was in Thailand, although some of the ingredients are not super easy to source. There is a Thai market down the road from us here in London, but even the Thai spicy basil is only available once a week there, and I’m not sure everyone can get kaffir lime fruit (for the zest) and young galangal root (huh? You might say) and some other items…but this cucumber salad has notes of Asian flair that ARE easy to source!

Beauty Detox bloggers- your assignment is to put your own twist on the classic summer cucumber salad. It does NOT have to be Asian-inspired. It can have Middle Eastern, Mexican, etc. spices, as well a the use of your own favorite veggies and herbs. Have fun with it! Now here’s my version:

Serves 2-3

6 cups sliced* organic cucumbers (I like to keep the skin on for organic for more beautifying and skin/hair-enhancing silica)

1 cup sliced purple cabbage (lots of vitamin C for a summer glow!)

2 Tbs. raw apple cider vinegar

1 Tbs. tamari

1 Tbs. coconut nectar (or maple syrup if you can not find)

1/2 tsp. sesame oil

1 Tbs. dill, chopped

1/4 tsp. high quality sea salt

* I prefer the cucumbers thinly sliced to soak up more of the dressing, but the width per slice is up to you.

Throw the cucumbers and cabbage in a mixing bowl and set to the side. Whisk together the other ingredients, the toss into the veggies. Cover and store in the fridge for 1-2 hours before serving. Enjoy!
